"We got a copy of this beautiful cookbook a few days ago and could hardly wait to try it out. I was bummed this afternoon, thinking it was too late to make a recipe from the cookbook as we had plans to go out to visit friends this evening. What a happy surprise when my daughter got this recipe started in the late afternoon, around 4:30-ish. The house smelled SO GOOD as the food cooked! We’ve made a lot of delicious Mexican meals at home but it usually takes many hours to cook to get the meat tender, and let the spices blend well.

Anyway, before I knew it, dinner was done (around 6) and it was delicious!

With all the gorgeous full color photos for every recipe, I am sure we will be making many more of these recipes. They all look so good.

(The pics are from our meal this evening, they’re the beef taco recipe from page 13, we used butter lettuce in place of taco shells. I am in the car now and don’t recall the exact recipe name, I think it’s called shredded chipotle beef tacos.)"

  • I’ve only tried one recipe, the Chile Dip. I have a newer pot, followed the steps to a tee using cassava flour, closed the pot up and set to manual for two minutes, but the “BURN” notification came on before the base sauce got up to pressure. I pulled the pot out, salvaged most of it and moved it to a clean pot on the stovetop (modifying the recipe with a lot more milk, of course), but that’s not the point, yeah?

    I still plan to try other recipes, just steering clear of the thick sauces with my pot.
  • Mexican food is hands down my favorite food. I make Mexican inspired dishes at least three times per week. I've experimented with making some of my favorites in the Instant Pot but found myself disappointed with the results. A couple of cookbooks I purchased had decent recipes but they relied on a lot of processed ingredients and I prefer to cook with whole foods.

    I already have The Art of Great Cooking With Your Instant Pot from Emily, this IP cookbook's author. It has been well loved for over a year. I was thrilled when Emily and her husband teamed up to create this TO DIE FOR Instant Pot cookbook with 80 of the most delicious recipes imaginable. Seriously. If the pictures don't get your drooling you clearly don't eat food.

    I cannot believe how EASY these recipes are. The flavors are authentic and every recipe I h ave made has been a breeze. But let's talk about how unbelievably delicious these recipes are. My gosh. I want to move in with Emily and Rudy and just have them cook for me all the time. What a talented couple they are. Seriously. These recipes blow anything I have ever tried out of the water.

    Get this cookbook. Now. The. End.
  • I’ve never cooked Mexican food at home beyond the absolute basics, so I’m so excited to try the recipes in this beautiful book. I have the previous instant pot book by these authors and the recipes were delicious and easy to follow. There’s a wide variety here of traditional and innovative takes on soups, sides, entrees, and desserts, including drinks! As with the previous book, everything is stunningly photographed, and the recipes are neatly laid out and easy to read. Highly recommend!
  • I have never been so obsessed w/my Instant Pot untill these GORGEOUS cookbooks by Emily at Recipes To Nourish. She & her husband have hit it out of the park with these Mexican classics, and their very own churo CAKE recipe! YES! You read that correctly CHURO CAKE!!! This cookbook is so incredible, I'm now ordering copies to give as gifts.

  • Who doesn't love Mexican food? Flavor bombs often enveloped in hard taco shells or soft wraps is a very popular dinner rotation for my family. And since we can't have wheat flour due to allergies, sometimes, we'll make "grain-free" exceptions with corn tortillas and corn taco shells. And this "amazing cookbook" (no pun intended) written by Rudy, a Mexican Chef, and his talented wife, Emily is my favorite Mexican cookbook. The recipes in this book are as authentic as they can get and using the Instant Pot is a HUGE plus in my kitchen. Beautiful photos and simple to follow recipes make this cookbook a "must-have" if you love Mexican food! And if you are not familiar with Mexican food, this cookbook will be the best primer to start trying recipes like Beef Tacos, Chicken Fajitas, Chili, Tamales, and more!
  • Oh my MEXICAN GOODNESS! I am so excited to finally get my hands on this book! Two of my absolute favorite foodie things... Mexican cuisine and my beloved Instant Pot... come together in harmonious deliciousness in this delightful cookbook! I am super excited to see some desserts in here too. The variations on flan are so creative and beautiful, I can't wait to try them all! I received a copy of this book for my honest review, all thoughts are my own, and have not influenced my review.... this book is awesome, and you should definitely get it!
